diy Once in a while we go to target as a family for movie night and pick out all the junk food we want to eat, and then we bring it back to the house and pig out. Well, one night I told myself I wasn’t going to grab the junk food I typically get. I was going to get something SOMEWHAT healthy. So, as I was perusing around the chocolatey-candy aisle, I stumbled upon this amazing little treat in the store, the cover of the bag captured me. GMO- free. If you know me, then you know I’m a sucker for products that say “vegan, organic, or GMO free” I can’t resist but to try it out and I love to support companies that try and make our world a little brighter with healthier options. I first saw them, I thought, surely I could make these at home myself, but decided not to since I just wanted to go home and relax the rest of the night. I found these precious chocolate bark treats. They were quite pricey at $5 a bag, and the bag was quite tiny… But heck, Tonight I was going to make a better choice and not get junk, sort of, ha!

So I grabbed these babies and  let me tell you they were delicious, so delicious that I ate the whole bag in one day, I mean the bag was pretty small, and before I knew it they were all gone! I told myself that I was going to attempt to make my own at home some time just to see how they would turn out, and my version was FANTASTIC! Chocolate chips and coconut oil is really all you need. Coconut oil is used as hardener. I think most of the add-in  toppings you could find in your own pantry. For my chocolate bark I used my ABSOLUTE FAVORITE chocolate chips from Enjoy Life brand. They are perfect because they are free from these top allergen ingredients, which make them a perfect snack for most.

FREE FROM:

  • Gluten
  • peanut
  • soy
  • casein
  • potato
  • wheat
  • treenut
  • fish
  • sesame
  • diary
  • egg
  • sulfites
  • shellfish

I also used gluten free pretzels, which, in my opinion made this snack a lot “healthier” especially if I want a little cheat snack every once in a while. Hehehe.

INGREDIENTS & RECIPE

1 bag of chocolate chips

1 tbs, coconut oil

2 cups, crushed pretzels

1/4 cup, pumpkin seeds

1 tbs, chia seed

**Heat up the chocolate chips in a microwaveable bowl, 30-45 second intervals depending on the watts of your microwave. Mix at every 30-45 second intervals so that you don’t burn your chocolate.

**Add 1 TBS  of coconut oil into chocolate and mix.

**Cover a small cookie sheet in parchment paper and pour chocolate onto parchment paper.

**Add all your mix-ins and pop in the freezer for at least an hour.

Super fast and easy, a lot easier than I expected, really you can’t go wrong with these! My 2.5 year old daughter even helped me make them.

After I had a few “tester” bites with my sous chef, I put my chocolate bark I out them all in a glass bowl and leave it in the freezer just as precaution. Or you could put them in a gallon ziplock bag and toss them in the freezer. Whatever works for you! Enjoy!Have you tried this before?
