My daughter is such a picky eater, and if you’re reading this, chances are your kid is a picky eater too. I feel your pain. Last week I was at my wit’s end because my daughter was melting down for quite a few different things. Typical 2-year-old behavior I suppose, but we also don’t eat as healthy as we should. I’m a firm believer in you are what you eat and what you eat can greatly affect your day-to-day person.

Banana and avocado pancakes for your pickiest eater.

My daughter has to carefully inspect the food you give her, smell it and then, and only then-if it passes those two stages, will she go on to take a small bite. Its exhausting and getting her to eat anything remotely healthy is a challenge. Now, that we’re in Hawaii and settled in. I’m  on a health food kick.

As long as I could remember when I was a kid, my mom always put smushed up bananas in the pancake batter. So, naturally when I got older I started to do that too.

Last week I promised my family that I would be changing our diet further to see if changing our barley healthy meals into really healthy meals would make a difference. I’m a big believer in whole body wellness and I’m a big believer in what you eat can affect you.

So, one morning as I was adding the usual bananas to my batter, I thought, “Hmm… what else can I throw in here to secretly to make it healthy?” As I was looking at my counter top, I found a ripe avocado and thought “perfect!”.

Avocados are perfect! Jerry and I like to eat avocados with certain latin meals I make, but my last experience sneakily adding avocados too something was when I made a vegan chocolate pudding. I can still taste it, the texture the flavor was perfect in that pudding. So, why not toss avocado in my pancake batter and give it a go?

I was afraid that the avocado was going to make my pancake batter green, but surprisingly it didn’t, it looked like a regular plain ol pancake. Score!

Banana & Avocado pancakes: sneaking healthy food in your toddler's meals.

Ingredients

  • 1 /2 Avocado
  • 2 Medium bananas
  • 1 1/2 cup Flour
  • 1 tbsp baking powder
  • 2 tbsp Raw honey ((optional 1 Tbsp white sugar))
  • 1 1/4 cup Milk ((optional: almond milk))
  • 1 Egg
  • 3 tbsp Melted butter
  • A pinch Cinnamon

Instructions

  1. Use a a bowl to Smash avocado and then bananas with a fork. Or you can use a blender, food processor, or mixer to achieve smooth texture. 

  2. Add your wet ingredients (honey, milk, egg, and melted butter) into the banana and avocado mixture, mix well again.

  3. Place all your dry ingredients(flour, baking powder, cinnamon) into a big bowl and mix.

  4. Now add your bowls together and mix well!

  5. Light oil your griddle or frying pan, set on medium heat. Use about 1/4 of the mixture to create your pancakes.
